When it comes to cooking in your kitchen, cornstarch is used as a thickening agent, much similar to what you would do with butter and flour to make a roux. Arrowroot powder works just as well as cornstarch, and when mixed with egg yolk, and milk, can thicken things up quite nicely too.
Arrowroot Powder is a white, powdery substance that comes from a tropical South American plant. It can also be used for personal care items. While Arrowroot is a powder that comes from South American plants, Cornstarch is also a powder — but made from corn. Cornstarch also thickens gravies, sauces and soups… and is also used in personal care. The process of making cornstarch requires high heat and chemicals as well.
Arrowroot Powder, on the other hand, goes through a different process — you can read about that HERE :. The starch is separated from the fibrous component of the root in a process that involves cutting the root into small pieces and mashing it into a pulp-like matter.
The pulp is then forced through a screen to obtain only the fine starch, at which point it is dried and ground into a powder. Simply swap with equal parts and the recipe will turn out as expected. But good news — arrowroot powder is a great thickener and can easily replace cornstarch.
Even better, arrowroot powder has no taste and leaves food glossy and clear, whereas cornstarch has a slight taste and leaves food cloudy and opaque.
In baking, I typically use arrowroot powder as a blend with other flours, such as almond flour, coconut flour and tapioca flour for bread and dessert recipes.
You could coat sweet potato fries in a dusting of arrowroot to make them crispier. You could also mix arrowroot powder with a blend of dried herbs to coat chicken before frying. I once added too much arrowroot to a sauce and it turned into a gloppy, jelly mess.
When using arrowroot powder as a thickener, remember two things:. Because arrowroot is not a grain, many people especially those with digestive issues or sensitivities find that arrowroot powder is more easily digestible. Arrowroot contains a good amount of potassium, iron and B vitamins, which is great for metabolism, circulation and heart health.
